Japanese Style Cheese Cake Recipe

Japanese style cheesecake are very different from the "Ang Mo" style as they are lighter in flavor, dried, fluffy, cotton soft ,bread-like & they usually use only 1 type of cream cheese.  The baking method makes the cheesecake very light & not too sweet, so even after a slice you will feel that you don't have enough of it. I baked the cheesecake two days ago, over half of the cheesecake was gone after shortly i placed in the fridge.

The Recipe

Organic Full Cream Milk, Pure Lime Juice, Butter, Philadelphia Cream Cheese, Caster Sugar. Original recipe says need 1/2 TBSP of Salt but I didn't use any salt on that day and it still taste good! 




























The Crust 
This step is OPTIONAL because most of the Japanese Style Cheesecake do not have crust.
  • 3 PCS of Digestive Biscuits 
  • 120g of Soften Butter 
The Cheesecake
  • 250g of Philadelphia Cream Cheese (1 Block)
  • 1/4 Cup of Caster Sugar
  • 2 Beaten Eggs (Do Not Over Beat)
  • 150cc of Full Cream Milk
  • 1 TBSP of Lime (Original Recipe uses Lemon Juice)
  • 1/3 Cup of Flour 
  • 20g of Melted Butter
For those who have problems with measuring the ingredients like me... Yo girls can check out the measuring cups and spoons from NTUC. Measuring spoons cost about SGD$2.88 and the cups are at SGD$11.80.

























Directions
  • Crush 3 digestives and the soften butter in the zip-lock bag. 
  • Line your baking pan 
  • with baking paper. (Japanese style cheesecake are usually in rectangle or square size so use the brownie or bread mould instead of the round mould.)
  • Add the crust and press firmly onto the mould. Set to chill in the fridge. 







































Cheesecake
  • Preheat the Oven to 180 Degree Celsius.
  • Cut the cream cheese into small slices so it's easier to beat.
  • Add Sugar and beat the Cream Cheese together.
  • Add beaten eggs (Little by little)
  • Add Fresh Cream, beat.
  • Add Lime Juice, beat
  • Add Flour (Little by little), beat
  • Add Melted butter, beat.
Pour all the mixture into the mould and bake it for 40mins. After that let it cool for 2-3hrs and you are ready to serve!

So I Went To A Housewarming Party.....

So I went to a friend's housewarming party somewhere at west yesterday. The owner is very hospitable and he too prepared some tasty food! Had a relaxing & enjoyable night with the girls & him!

Despite how I beg him, he just don't want to share the recipe. He didn't use food coloring at all. FYI

Cupcakes & Muffins Maker

My First Cupcake Ever: Strawberry Cream Cheese Cupcake

With many attempts, I finally got the recipe right!
Thanks to my friend Afni and YanKayKay's recipe but I modify alittle =>

The Ingredients
Omit out the Digestives Biscuits. Initially I tried to make the digestives crumbs and it turns out crazy oily. 































The Batter
  • 2 Eggs
  • Cooking Oil Sprayer
  • 1.5 Cup All Purpose Flour
  • 1 Tsp Baking Soda Powder
  • 1/2 Tsp Salt
  • 1/2 Cup of Confectioner Sugar
  • 1/2 Cup of EQUAL Sugar
    (Recipe says 1 Cup of Confectioner Sugar but I replace it with EQUAL Sugar. Healthier this way.) 
  • 1 Scoop of Sour Cream Cheese
  • 1 Tsp of Vanilla Essence 
    (I couldn't find the vanilla extract from supermarts except the essence.)
  • 2 Cups of Diced Strawberries 

Frosting
  • 250g of PHILADELPHIA Cream Cheese. 
    (That is the whole packet of it)
  • 1/3 Stick of Unsalted Butter. 
    (The best butter so far I've tried is the SCS Pure Creamery Butter. The rest selling at the supermarts are crazy oily & not suitable for baking!)
  • 1 Cup of Sugar. 
    (Again, I replaced it with EQUAL sugar.)
  • 1 Tsp of Vanilla Essence 
  • Food Coloring Dye.
    (Optional if you want your frosting to look pretty lol)

Preheat the oven to 180 Degree Celsius for around 10 - 15 mins depending how long your baking oven heats up. Mix the All Purpose Flour, Salt, Sugar first, then add it Vanilla Essence, Sour Cream Cheese, Strawberries and mix again. Now add in the eggs ( 1 at a time), mix, add in the 2nd egg, mix and carefully do not over beat it! Your cupcakes will not puff up =( 

Spray the cooking oil onto the paper cups. Fill the paper cups to 3/4 full and let it bake for 25 mins and your entire kitchen smells mad good! 

So the 1st try, I "GEY KIANG" (act clever) go and 1/2 cup of milk because I thought it was dry and didn't realize strawberries also got water itself. And my 1st batch turns out like this...

Now it smells & taste so much better! URESHIIIII~~~





































Frosting TIME! 
SUPER EASY LA THIS STEP! =DD Beat the Cream Cheese, Butter, Sugar and Vanilla Essence together. Then add in the desire food color dye you want. I separate into 2 and mix with BLUE & PINK and them them chill for 1hr. 

And decorate them! I added half slice of strawberries and topped it with colorful hearts!
